Chapter 11 - The Young Apprentice

By the following spring, Elena had become an established sanctuary in the neighborhood. Julian spent less time handling paperwork and more time working prep. His fingers, once known only for signatures and violence, now bore small burns and calluses from the wood hearth.

One Tuesday morning, a young boy, no older than fifteen, was caught trying to steal three loaves of bread from the cooling rack near the alley window.

The dishwasher grabbed him by the scruff of his neck and dragged him into the kitchen, shouting for the manager. The boy was skinny, with dirty sneakers, torn jeans, and eyes wide with defiant terror.

Julian walked out of the dry storage. "What's the noise?"

"Found this rat climbing through the delivery grate with the sourdough," the dishwasher reported.

Julian looked at the boy. The boy looked back, chin thrust forward, expecting a blow.

"What's your name?" Julian asked.

"Leo," the boy spat out. "Just call the cops. Don't give me a lecture."

Julian looked at Maya, who was watching quietly from the pastry station. Then he turned back to Leo.

"Are you hungry, Leo?"

The boy blinked, caught off guard. "What?"

"I asked if you were hungry. If you steal bread, you’re either starving or stupid. Which is it?"

"I haven't eaten since yesterday," Leo mumbled, looking down at his scuffed shoes.

Julian pointed to the hand sink. "Wash your hands. Scrub under your nails with that brush. If there's dirt on your knuckles, you don't touch food in this room."

Leo hesitated, then moved slowly toward the sink, scrubbing his hands until they were raw. Julian pulled a clean apron from the shelf, tossed it at the boy's chest, and pointed to a sack of red potatoes sitting in the corner.

"There are fifty pounds of potatoes in that bag," Julian said. "You peel them with that peeler. If you take off too much skin, you eat the peelings. When you finish, Maya will make you a bowl of stew. And tomorrow at six in the morning, you show up through the front door, or I report the theft. Understand?"

Leo stared at Julian, tears welling in the corners of his eyes, before nodding vigorously. "Yes, sir."

Maya watched Julian walk back to the hearth, a small, knowing smile touching her lips.
