Chapter 9 - The First Plate

Word of Elena spread not through paid advertisements, but through the mysterious, whispering network of the city's culinary world. The rumor of a former enforcer funding a mysterious young chef who cooked forgotten Tuscan food drew intense curiosity.

Opening night was unpretentious. There were only eight tables, dressed in unbleached linen with simple beeswax candles. The menu was written by hand on craft paper: five courses, no substitutions, paired with unheralded wines from small hillside vineyards in northern Italy.

At table four sat Henri Laurent, the sharpest and most feared restaurant critic in the tri-state area—a man known for eviscerating pretentious luxury dining rooms.

In the kitchen, the ticket machine clicked.

"Table four," Maya called out, her voice ringing clear over the sizzle of pans. "First course: Bitter greens in warm pancetta vinaigrette with charred rosemary bread. Second course: Stufato di Memoria."

Julian stood at the line beside her, wearing a clean white cook’s apron over an ironed black shirt. He handled the vegetable station with quiet, mechanical precision. Every peel was uniform, every turn of the squash immaculate.

When the plate of stew was ready, Maya garnished it with the single sprig of mountain rosemary, exactly as she had at L’Aube.

"Take it out," Maya said to Julian, stepping aside.

Julian looked at her. "I'm not the server, Maya."

"You built this room," she said firmly. "And that man out there needs to know this isn't theater. Serve your mother's food."

Julian picked up the white ceramic bowl. His hands, usually so steady with weapons and contracts, trembled slightly under the weight of the warm porcelain. He pushed through the swinging double doors into the dining room.

He set the bowl before Henri Laurent. The critic looked up, eyebrows raised at the sight of the notorious Julian Moretti serving dinner.

"What is this called?" Laurent asked, pen poised over a tiny notebook.

"It’s just beef, wine, and time," Julian answered quietly. "Eat it before it gets cold."
